Seeing as how I already stated my intent to take Dancer to 75 (and hopefully be the first level 75 Galka Dancer on our server), I thought it would be wise to start an entry for this job.
EDIT: Dancer quest walkthrough
1. Speak with Laila (G-7) in Upper Jeuno, she will ask you for a Stardust Pebble.
2. Speak with Rhea Myuliah at (G-7) for a cut scene and then head to Lion Springs Tavern in Southern San d'Oria.
3. In Southern San d'Oria at (K-6) talk to Valderotaux for another cut scene.
4. Now, travel back to Jeuno and talk to Rhea Myuliah again, she will tell you information about a pebble that is lying at the bottom of Lake Mechieume in Jugner Forest.
5. Now, journey to (H-5) in Batallia Downs where you will find a Cavernous Maw. Click on it for a cut scene that begins the Wings of the Goddess missions.
6. You will now be in the Shadownreign Realm. Monsters in Batalia Downs [S] will aggro level 60+.
7. Travel to Jugner Forest [S], at (I-5) you will find Glowing Pebbles, click them for yet another cut scene.
8. Return to Upper Jeuno to speak with Laila (G-7) once more. Now you may switch jobs in your mog house and become a Dancer!

Dancer Job Abilities Trance (Level 1) While in effect, lowers TP cost of dances and steps to 0.
Sambas These dances imbue melee attacks with special enhancements. Drain Samba (Level 5) Aspir Samba (Level 25) Drain Samba II (Level 35) Haste Samba (Level 45) Aspir Samba II (Level 60) Drain Samba III (Level 65)
Waltzes These dances cure and remove ailments from party members. Curing Waltz (Level 15) Divine Waltz (Level 25) Curing Waltz II (Level 30) Healing Waltz (Level 35) Curing Waltz III (Level 50) Curing Waltz IV (Level 70)
Jigs These dances enhance your own abilities. Spectral Jig (Level 25) Chocobo Jig (Level 55)
Steps These dance steps enfeeble enemies while granting access to finishing moves. Quickstep (Level 20) Box Step (Level 30) Stutter Step (Level 40)
Flourishes I Powerful dance steps that can only be used after earning finishing moves. Animated Flourish (Level 20) Desperate Flourish (Level 30) Violent Flourish (Level 45)
Flourishes II Powerful dance steps that can only be used after earning finishing moves. Reverse Flourish (Level 40) Building Flourish (Level 50) Wild Flourish (Level 60)
Dancer Job Traits
Evasion Bonus: I @ 15 II @ 45 III @ 75
Resist Slow @ 20
Subtle Blow I @ 25 II @ 45 III @ 65
Accuracy Bonus I @ 30 II @ 60
Job Ability: Dances
Dances are divided into three categories: Sambas, Waltzes, and Jigs. Each of the dances within these categories is acquired at a different level, and requires a certain amount of TP to use.
Each category has its own recast time, and using a dance will prevent the use of other dances within the same category until the recast time has expired. In addition, the effect of a Samba dance will be overwritten by other dances within the Samba category, regardless of the remaining duration.
Job Ability: Steps
Steps are used to enfeeble an enemy, while at the same time generating the “finishing moves” required to perform Flourishes. Steps require TP to use, in the same manner as dances. The enfeebling effects produced by Steps can be stacked up to five times. The more times an effect is stacked, the more powerful it becomes.
*Finishing moves are generated at a different rate depending on whether dancer is set as your main job or support job. *Up to a maximum of five finishing moves can be stored at one time.
Job Ability: Flourishes
Flourishes are used to produce various powerful effects by consuming the finishing moves generated by Steps. Each type of Flourish requires a certain number of finishing moves to perform.
Flourishes are divided into two categories: Flourishes I and Flourishes II. Each of the Flourishes within these categories is acquired at a different level. Each category has its own recast time, and using a Flourish will prevent the use of other Flourishes within the same category until the recast time has expired.
Flourishes I Animated Flourish Provokes target. Requires at least one finishing move. Desperate Flourish Weighs down a target with a low rate of success. Requires one finishing move. Violent Flourish Stuns target with a low rate of success. Requires one finishing move.
Flourishes II Reverse Flourish Converts remaining finishing moves into TP. Requires at least one finishing move. Building Flourish Enhances potency of next weapon skill. Requires at least one finishing move. Wild Flourish Readies target for a skillchain. Requires at least two finishing moves.
Building towards a Flourish Build TP with weapon attacks until a Step can be used ↓ Earn finishing moves by using Steps ↓ Consume finishing moves to perform a Flourish

I've been trying to keep up with the various blogs and such from the people that are attending Fan Fest in California this weekend. From the FFXIclopedia blog (all times listed are PST):
10:30 (11/16/07) - Gondai takes the stage to talk about the two new jobs.
Dancer is designed to be a healer who is also on the front lines, using TP to heal other players. Also enfeebles - with "Steps". Each time a step is used the dancer gets flourished which can be used for finishing moves. Play will look like: Attack -> TP -> Steps -> Flourises -> Finishing moves - all while healing party.

I am SO playing this job! Gad told me it uses dagger, and I love the being able to melee but still heal part. Everything I loved about bard before it becomes a ballad machine.
...and the taru dancing is super cute.

They mentioned the dancervoke will be a substitute for warriorvoke!
Maybe finally a second subjob for a tanking paladin!
And the dances look kinda fun >.>

Information added 19 November '07.
Given that Dancers will now get Evasion Bonus AND Subtle Blow AND Accuracy Bonus, I'm going to have a tough time picking a subjob. Here's my slightly revised subjob choices so far:
1-15 DNC/WHM (I usually solo jobs to 15 now, so WHM for additional curing)
15-30 DNC/THF (Job Trait bonuses don't stack, but I'm effectively getting Evasion Bonus 5 levels earlier anyway)
30-50 DNC/SAM (Third Eye and Store TP for hopefully a little more effectiveness on the front lines)
50-75 DNC/NIN (Shadows and a 2nd tier of Dual Wield)
I'm also debating something of an endgame Store TP build for DNC/SAM, but two of the pieces of equipment I'd need to make this work I can only get by finishing CoP (Rajas Ring and Brutal Earring).

I actually started a CoP linkshell back in March, but I only had about 4 members, and we could never coordinate a time. That's about when I stopped playing FFXI for a while and jumped to WoW for 4 months. I still have the linkshell if we want to use that one for coordinating CoP missions. BTW, I'm also on 4-2.
Anyway, back to Dancer. I read on a couple of the forums that Dancers will get Heart Snatcher as a dagger, but not Blau Dolch, which disappoins me. (Blau Dolch is the dagger version of Maneater, Wagh Baghnahks, etc.; it has a latent effect of additional damage when you are below 100% TP.) I was hoping to use BD and HS as DNC/NIN, but now that won't happen. Oddly enough, Dancer is also now apparently listed as using a Joyeuse, which gives me another reason to get one. 
I was out in Altepa the other night skilling up dagger in anticipation of Dancer, and when I first logged back in after the update, I noticed DNC on the end of my job listing for the bronze knives I was using. Anybody that plans to play Scholar might want to check the staff and club selection to see what they can use.

4-2 is a common theme here. I think that is because that is the mission we were all on when Tharan's CoP Static ended.

Initial post edited; it seems we get multiple tiers of Evasion Bonus, Subtle Blow, and Accuracy Bonus.
All the more reason to get back on the ball and level my Dancer!
